It is made by whipping butter at 10\u00b0C (50\u00b0F) with a sweet base like <strong><a href=\"https:\/\/biancolievito.it\/en\/pate-a-bombe\/\">p\u00e2te \u00e0 bombe<\/a> <\/strong>or <a href=\"https:\/\/biancolievito.it\/en\/italian-meringue\/\"><strong>Italian meringue<\/strong><\/a>.<\/p><p>Choosing between these two bases will change both the texture and color of the cream:<\/p><p>&#8211; With <strong>meringue<\/strong>, you get a <strong>light<\/strong>, <strong>airy<\/strong> buttercream with a pale color.<br \/>&#8211; With <strong>p\u00e2te \u00e0 bombe<\/strong>, the cream is <strong>ticker and creamy<\/strong>\u00a0with a yellow tint. In this case, I recommend adding flavors like nut pastes, chocolate, or liqueur.<\/p><p>My favorite method for making buttercream is p\u00e2te \u00e0 bombe (egg yolks whipped with sugar syrup heated to 121\u00b0C \u2014250\u00b0F).
