This method is now widely used to improve the texture and gluten structure in various types of baked goods.<\/p><h2><span data-preserver-spaces=\"true\">HOW TO AUTOLYSIS THE DOUGH<\/span><\/h2><p>The <strong>autolysis<\/strong> process is surprisingly simple and can be broken down into three key steps:<\/p><h4>1. However, it\u2019s not always necessary, especially when using weak flour or for direct dough processes.<\/p><h3><span data-preserver-spaces=\"true\">AUTOLYSIS: PRACTICAL CASES<\/span><\/h3><h4><span data-preserver-spaces=\"true\">HOMEMADE BREAD AND PIZZA<\/span><\/h4><ul><li>If you use low-strength flour, <span data-preserver-spaces=\"true\">autolysis <\/span> is unnecessary; indeed, it is counterproductive.<\/li><li><span data-preserver-spaces=\"true\">For a <strong>Medium Strength Flour<\/strong> (with a protein content lower than 12%): Autolysis is not required, but it can <strong>positively affect the dough<\/strong>.<\/span><ul><li class=\"ql-indent-1\"><span data-preserver-spaces=\"true\"><strong>Autolysis<\/strong>\u00a0the dough for about <strong>30 minutes at 20-22\u00b0C (68-71\u00b0F)<\/strong><\/span><\/li><li class=\"ql-indent-1\"><span data-preserver-spaces=\"true\">If the recipe foresees a high content of Levain (40% &#8211; 50% of the flour weight), add it to the dough and autolysis for 20 minutes.<\/span><\/li><\/ul><\/li><li><span data-preserver-spaces=\"true\">In case you use a <strong>strong flour<\/strong> (with a protein content between 12% and 14%): In this case, autolysis can give a <strong>great advantage<\/strong>.<\/span><ul><li class=\"ql-indent-1\"><span data-preserver-spaces=\"true\">With <strong>Panettone Flour<\/strong> (W340-360, 14-16% protein): <strong>Autolysis for 60 minutes.<\/strong><\/span><\/li><li class=\"ql-indent-1\"><span data-preserver-spaces=\"true\">For <strong>Manitoba Flour<\/strong>: Allow 80 minutes of autolysis <\/span><\/li><li class=\"ql-indent-1\"><span data-preserver-spaces=\"true\">For <strong>Wholemeal Flour<\/strong>: Increase the <strong>hydration<\/strong> of the initial dough to <strong>65%<\/strong> (650 g water to 1 kg wholemeal flour) and <strong>autolysis for 40 minutes<\/strong>.<\/span><\/li><\/ul><\/li><\/ul><h4><span data-preserver-spaces=\"true\">DOUGH FOR LEAVENED PRODUCTS\u00a0<\/span><\/h4><ul><li><span data-preserver-spaces=\"true\">Place the flour of the first dough (or the recipe, if working with just 1 dough) in a bowl or mixer.<\/span><\/li><li><span data-preserver-spaces=\"true\">Create an emulsion with the recipe&#8217;s liquids: Eggs, Yogurt, water, milk, cream<strong>, etc.<\/strong><\/span><\/li><li><span data-preserver-spaces=\"true\">Weigh the emulsion at a rate of 55% of the weight of the flour: for 1kg of flour used, you will weigh 550gr of liquid emulsion<\/span><\/li><li><span data-preserver-spaces=\"true\">Mix the flour with the liquids until the dough is formed and the liquids are absorbed into the flour.<\/span><\/li><li><span data-preserver-spaces=\"true\">Cover with a plastic sheet and autolysis for <strong>60minutes at room temperature (20-22\u00b0C, 68-71\u00b0F)<\/strong><\/span><\/li><\/ul><h2>Conclusion<\/h2><p><strong>Autolysis<\/strong> is a simple yet effective technique that can dramatically improve the quality of your dough.
