Making a sourdough starter at home requires very few ingredients: mainly flour and water. Fermentation begins spontaneously thanks to microorganisms naturally present in the flour and in the surrounding environment, which are progressively selected over the following days through fermentation and regular feedings.
Many recipes recommend adding an extra ingredient, such as fruit pulp, yogurt, or honey, to help initiate fermentation. These ingredients can indeed modify the fermentation environment, but they are not essential. In the method I use on Biancolievito, I prefer to start with flour alone, allowing the community of yeasts and lactic acid bacteria to develop gradually through regular feedings. Flour provides not only the nutrients needed for fermentation, such as sugars, proteins, and minerals, but also contributes to the initial microbial population. Our goal is therefore to gradually develop a stable community of yeasts and lactic acid bacteria that becomes increasingly active over time.
Developing a sufficiently stable sourdough starter generally takes about 10–15 days, but this should be considered only a guideline. The type of flour, temperature, fermentation activity, and environmental conditions can all significantly affect the timing. So do not worry if your starter does not follow the schedule exactly: its behavior after each feeding will be the most useful indication of how it is developing.

Ingredients for Making a Sourdough Starter at Home
To start your sourdough starter, you will need:
- Flour: for the initial dough, I prefer whole-wheat or semi-whole-wheat flour, which is rich in nutrients and enzymatic activity. For subsequent feedings, we will switch to a strong Italian Type 00 flour with about 14% protein and, as a reference for more experienced bakers, a strength of around W360. The flour I use to feed my sourdough starter is Molino Quaglia Panettone Flour.
- Water: preferably at room temperature. If your tap water is heavily chlorinated, you can use low-mineral bottled water instead.
- Salt (optional): in the method I use, I add a small amount to the initial dough. This can be particularly useful if you start making your sourdough starter during the summer.
How to Make a Sourdough Starter – Step by Step
Day 1 – Starting the Sourdough Starter
During this first stage, we need to create the right conditions for the microorganisms naturally present in the flour and surrounding environment to begin multiplying. Flour, water, temperature, and time will gradually create an environment that favors the development of the future community of yeasts and lactic acid bacteria.
Knead together:
- 150 g whole-wheat or semi-whole-wheat flour
- 75 g still water, preferably bottled if your tap water is heavily chlorinated
- 1 g salt
Once all the ingredients have been mixed and kneaded together, place the dough in a clean jar. Cover it with cheesecloth or a piece of paper towel secured with a rubber band and leave it to ferment for 24–36 hours at approximately 25 °C (77 °F).
At this early stage, you may not yet see any noticeable increase in volume. Inside the dough, however, the microbial population that will drive fermentation over the following days is beginning to be selected.

Days 2–7 – Feeding the Sourdough Starter
After about 24–36 hours, you will normally begin to see the first signs of fermentation. The volume may not have increased very much yet, but bubbles will begin to appear on the surface and inside the dough, and the characteristic aroma of fermentation will start to develop. At this stage, it may still be fairly sharp.

Once the starter begins to show these first signs of activity, remove any crust that may have formed on the surface and take the starter from the center. Weigh the amount you want to feed — I recommend maintaining at least 200 g of starter — and knead it with:
- Strong Italian Type 00 flour: the same weight as the starter
- Water: 43% of the flour weight
For example, to feed 200 g of sourdough starter, you will use:
- 200 g strong Italian Type 00 flour
- 86 g water
Knead everything together and transfer the starter back into a container. A graduated container or measuring jug is particularly useful because it allows you to monitor the increase in volume more accurately. Cover the container and leave it to ferment for approximately 48 hours at 25 °C (77 °F).
By the end of this stage, you should begin to see more noticeable growth, reaching approximately 1.5 times its initial volume.
From this point onward, the starter should become progressively more active after each feeding. Over the following days, its growth should become increasingly noticeable and consistent, eventually doubling — and later exceeding twice — its initial volume. If your starter develops more slowly, it does not necessarily mean that something has gone wrong: stabilization times can vary, and it may simply need a few additional days.
Continue with regular feedings, keeping the proportions and temperature as consistent as possible, until the starter is able to triple its volume in approximately 20–24 hours at 25 °C (77 °F).
How to Tell When Your Sourdough Starter Is Ready
Continue with regular feedings using the same proportions described above, keeping the starter as close as possible to 25 °C (77 °F).
As the days go by, you will notice that the starter reaches the same level of growth in progressively less time. This is one of the most important signs that the culture is becoming more stable and increasingly active.
When, after feeding, the starter can consistently triple its volume in about 6–8 hours at 25 °C (77 °F), it can be considered sufficiently stable to begin using it in simpler preparations.
However, it is important to distinguish between a starter that is active and one that is fully mature, strong, and well balanced, especially if you plan to use it for complex doughs such as panettone, pandoro, and colomba.
For a sourdough starter intended for large enriched products, the reference I use on Biancolievito is a rise to approximately 2.5 times its initial volume in 3 hours and 30 minutes at 30 °C (86 °F) after feeding. This parameter should always be evaluated together with the starter’s structure, aroma, taste, and acidity.

Once the starter has reached good stability, you can begin to store it properly and use it in your recipes.

In this case, the Sourdough will take longer to double the volume. Let it ferment for as long as necessary, and then continue with the usual refreshments.
If the Sourdough does not rise, there are many possible causes. First, you can refresh it by decreasing the amount of flour compared to the yeast (800gr of flour for 1kg of yeast) and add 1gr of malt powder for each kg of flour.
The Sourdough will be ready when it grows to between 3.5 and 4 times its initial volume in 7/8 hours.
Wholemeal or semi-wholemeal flours are suitable to start the preparation of Sourdough and trigger the first fermentation. After that, I recommend using a high-quality Bread Flour with content of proteins greater than 14% (or W 360 if you live in Europe).
Of course, you can use both gluten-free flour and flour mixes to make Sourdough. For example, you can use rice flour and rice starch together!
No, it is essential to leave the Sourdough in an oxygenated environment to promote new yeast cells and their interactions with the air’s bacteria. Simply cover the bowl with a cloth or some paper
High summer temperature makes it more challenging to control yeast acidity because it favors its development.
On the other hand, cold winter temperatures can slow down fermentation.
The best solution is to create a fermentation environment of around 19 degrees (66°F) (+/- 2°C).
No, a bath is only required when refreshing the mature Sourdough.
There is always a part of the previous dough discarded (such as the crust). However, I suggest not to use these parts, especially during the first weeks of preparation, because they can contain bacteria not tolerated by our body. This is not the case for the refreshments made when the Sourdough is ready and mature.
Here the waste parts can be dried first in the air and then in an oven at 100°C (212°F) for about 40/60 minutes and finally pulverized in a mixer. The resulting powder can be added to the bread and pizza doughs (about 10gr/kg of flour) to enhance the acidic note.
Most likely, the Sourdough has become too acidic. In this case, you can rebalance it by refreshing it with a yeast: flour ratio of 1:1.2 (1kg yeast and 1.2kg flour).
Yes, the real clock in Sourdough’s preparation is the Sourdough itself. If this gets to the proper rise earlier than expected, go ahead and refresh it.
Yes. Yogurt, honey, or fermented fruit pulp are very common starters to begin sourdough preparation. I personally do not recommend yogurt and honey because they create unstable acidity. I would instead recommend using fermented fruit pulp or simple whole wheat/semi whole wheat flour.
In this case, throw away the Sourdough and sterilize all utensils used before starting the preparation all over again.

Buongiorno! Sono al 5 giorno dalla preparazione del mio L.M. e dopo le 48 ore di rifresco fatto con farina semintegrale (era diventato il doppio!) ho rinfrescato con farina 00 forte ma dopo 12 ore sembra non crescere rispetto a prima: è colpa della farina? Perché? È a temperatura ambiente stabile 25 max 26 gradi coperto con garza. Grazie mille per i tuoi suggerimenti preziosissimi.

Quando cambi farina è normale che il lievito “rallenti” un pò. Continua a rinfrescarlo con farina 00 forte ogni 24ore, tenendolo sempre ad una temp ambiente intorno ai 24-25°C!

Ciao Nicolò, in generale non ti consiglio di aggiungere il sale, una volta innescata la fermentazione.
Aggiungilo solo se la temperatura della stanza inizia a diventare piuttosto calda (sopra i 25°C).
Tieni conto che all’inizio è normale che il lievito abbia un’acidità sbilanciata ed avrà bisogno di alcuni giorni per assestarsi!

Domani sono 2 gg che ho iniziato a creare il LM( ho utilizzato una Tipo1 Biologica e 50% di idratazione) e si è formata una crosta liscia (come quando si lascia un impasto senza copertura) sulla superfice. La temperatura è sui 20/22gradi e mi chiedevo: quali sono gli indizi che posso fare il primo rinfresco? Questa crosta può inibire la formazione del LM? Grazie.

all’inizio non vedrai uno sviluppo (o comunque molto limitato). Se provi ad annusare l’impasto, dovresti avvertire una nota acidula.
Dopo 2giorni a 20gradi è molto probabile che il tuo impasto sia pronto!

Mi sto cimentando con la preparazione del lievito madre ma ho avuto uno sviluppo “anomalo”:ieri ho effettuato il primo rinfresco (a 48 ore dalla prima preparazione)e questa mattina,dopo solo 12 ore,lo ritrovo più che raddoppiato..!ho usato per la preparazione iniziale farina di segale e per il rinfresco farina di tipo 1 (è l’unica che ho trovato con proteine pari al 15%). Mi chiedo se ho sbagliato qualcosa e nel caso come correggere ..grazie ancora

molto probabilmente dipende dal fatto che nel tuo lievito hai ancora una fortissima attività enzimatica portata dalla farina di segale e da quella di tipo 1.
Ti consiglio di usare una farina 00 di quelle adatte per Pane (al super le trovi con la dicitura “farina per pane”).
