This paste is an excellent way to flavor croissant dough. It will release the intense aroma naturally given by orange, lemon, and vanilla into the baked croissant.Once ready, you can store the mix tightly closed in an airtight jar in the fridge for approximately 1 month.

RECIPE FOR: 800 gr of Flavoring Paste

Ingredients
- 100 gr Water
- 100 gr Granulated Sugar
- 5 gr Salt
- 100 gr Inverted Sugar
- 100 gr Glucose Syrup
- 300 gr Candied Orange Peel
- 20 gr Grated orange zest
- 20 gr Grated lemon zest
- 60 gr Lemon pulp without seeds
- 10 gr Vanilla
DIRECTIONS
- Boil water, salt, and all sugars (granulated sugar, inverted sugar, glucose syrup)
- Pour the boiling syrup into a blender with the rest of the ingredients and blend into a fine puree.
- Store in an airtight jar in the fridge for up to 10/15 days
NOTES
You can use this paste for flavoring leavened dough and add approximately 25gr of paste for each kg of flour
